Belgian classic: Rabbit in beer

Sör 004Always a favorite to serve rabbit in Belgium, specially at Easter time, using the popular Kriek/Cherry beer and serve with French/Belgian fries.

  • Ingredients: 1 cut up rabbit, small amout butter, to fry rabbit in, 1 large onion, finely chopped, 2 carrots, cubed in small blocks
  • 1 apple, cubed in small blocks, 3 sliced smoked bacon, finely diced, water, 1 bottle dark beer or 1 bottle cherry/kriek beer or 1 glass madeira wine
  • salt, thyme, sugar, bay leaf, 1 slice bread, large, mustard


  1. Brown the very well cleaned rabbit pieces in the butter.
  2. Sprinkle a little sugar over all and add all ingredients except the bread and mustard.
  3. Cover with the lid and let simmer until rabbit is tender.
  4. Spread mustard on slice of bread.
  5. Take rabbit pieces from sauce and lay bread slice in sauce and stir until sauce is thickened due to the bread.
  6. Serve with French fries and apple sauce.
  7. Instead of apple sauce I served the rabbit with fresh in olive oil grilled asparagus, sprinkled with sesame seeds and lemon.
