Ingredients: 300 gr ground-minced porkmeat, 1 fresh cucumber, 1 onion, 2 cloves garlic, 1 egg, 200 gr fresh soya sprouts, 1 chicken stock
1 tbsp soy sauce, salt and pepper, 1 tbsp mirin vinaigrette, 1 star anise, 5-6 cloves, fresh spring onion, red pepper flakes, 100 gr sugar peas
First prepare the meatballs. Sauté the finelly chopped onion in 1 tbs oil and mix into the minced meat.
Season with salt and pepper and paprika. Beat the egg, add to minced meat. Work together the ingredients well. Mould meat into ball shapes by hand.
Soak noodle in cold water.
Prepare chicken broth add star anise and cloves and when it’s boiling lower the heat and drop the balls in one by one.
Wash the cucumber and grate it, then add to soup the sugar peas, peeled and sliced mushroom and also the glass noodle.
Flavour soup with soy sauce, mirin or lemon juice and add fresh soya beans as well. If necessary season it with pepper and salt. The soup is ready when the meat balls are tender.
To serve decorate soup with freshly chopped spring onion and roughly chopped peanuts.
