Endive and strawberry salad

Schliessheim and Africa days 022s so delicate, and has such a wonderful, just a bit of bitter flavor. This is a quick and easy salad recipe, chopped endive tossed with halved strawberries and crumbled gorgonzola, and drizzled with olive oil and vinegar. Perfect for the summer. Some of the other lettuces in the chicory family such as curly endive, escarole, frisee and radicchio. Enjoy!


3 endive heads, sliced first lengthwise, then crosswise in 1/2-inch slices

200 grs of fresh strawberry

2 tbsp crumbled gorgonzola or Greek Feta cheese

  • 2-3 tbsp olive oil
  • 2 teaspoons cider vinegar (balsamic is good too)
  • Sprinkle of salt and freshly ground black pepper

2 teaspoon of sugar


Place the chopped endives in a large bowl. Add crumbled gorgonzola, and washed and chopped strawberries. Toss the brown sugar on them and combine. Mix olive oil and vinegar together then drizzle that liquid over the salad. Toss to combine.

Season to taste with a sprinkling of salt and pepper. Serve immediately with baguette.
