Chicken on spinach bed

p1100762De gustibus non est dispuntandum! This dish perfectly will correspond to this Latin phrase, which means: in no matters of taste, there can be no disputes. The phrase is most commonly rendered in English as: There is no accounting for tastes! Sometimes the phrase is expanded as De gustibus et coloribus, referring to taste and colors as well!

Ingredients: 1 chicken breast fillet for each person, 350 gr of fresh spinach leaves, lemon juice, (half of a lemon) 2 cloves of garlic, 2-3 tbsp olive oil, 200 ml chicken broth, salt and pepper to taste, 1 tsp of oregano, 200 ml créme fraiche or cream for cooking

Methods: Heat two or three tablespoons of olive oil in a pan. Fry in the chicken breast on each sides for three minutes. Take out fillets from pan and put aside.

Add pressed or grated garlic and spinach to olive oil. Let them fry then pour over chicken broth. Add cream fraiche or cream. Flavor with oregano and lemon juice or white wine and let the spinach simmer for 10 minutes.

Place chicken breasts back into pan and let everything being cooked for 10 more minutes. Serve fried chicken alongside with rice.P1100763.JPG
