Have you ever tried spinach with figs and ginger flavored chicken? Or kohlrabi with salmon?

My spring “talent show” begins with spinach, kohlrabi, young baby carrot and sugar peas…The spring star recipes are full of surprises! You won’t be disappointed, I promise!

Quiche with sugar peas, basil and mint

Ingredients: 100 g butter, 375 g flour, salt, 500 g sugar peas, 150 gr onion, 50 g bacon, 50 g sun dried tomato without oil, 2 cloves of garlic, 1 bunch of basil, 1 bunch of mint, 5 eggs, 150 gr créme fraiche, 150 ml milk, pepper, nutmeg, 30 g pine nuts

Directions: Preheat oven to 400 F (200 degrees C). Line a cookie sheet with foil.

Mix butter with flour a pinch of salt and 150 ml water. Make a batter then put aside for 30 minutes. Clean the sugar peas, cook for two minutes in boiling water. Chop onion, cut bacon and tomato. Heat oil in a pan and sauté bacon with onion garlic and tomato. Mix in the half of the basil and mint.

Roll dough and place into a springform. Whisk milk and créme fraiche in a large bowl until smooth. Whisk in eggs. Salt and pepper to taste and flavor it with nutmeg as well. Layer bacon mixture with the sugar peas. Pour over egg mixture and finally toss the pine nuts on the top.

Place quiche on prepared cookie sheet. Cover quiche with foil.

Bake in preheated oven for 1 hour (200 grades). After 40 minutes cover with tinfoil. Remove foil and bake for 10 to 15 minutes, or until top is golden brown and the filling is set. Bestrew with chopped fresh basil and mint leaves.

Carrot in an ahorn syrup butter with pork cutlet

Ingredients: 2 toasts, 35 gr pecan or walnut, 90 gr butter, salt, 1 big apple, 1 tbs sugar, 1 tbs lemon juice, 50 ml apple juice, 3 tbs horse radish creme, 650 gr carrots, 4 pork filets, (180 gr per person) pepper, 4 tbs oil, 4 tbs ahorn syrup, 3-4 sprig of thyme

Directions: Toast the breads, then fry them in melted butter bestrew with nuts.
For the apple horseradish mousse: Clean the apple, cut into small pieces, cook in the apple juice with sugar and lemon. When it is ready add horseradish. Mix well.
(Peel the carrots. Place them in a saucepan, and cover with salted water; bring to a boil, and cook until just fork-tender (about 10 minutes, don’t overcook!). Drain the carrots, then submerge under ice water or very cold water.
Tenderise filets salt and pepper to taste. Heat oil&butter mixture and sauté pork filets for 5 minutes.  Melt butter in an other large frypan over medium-high heat. Add maple syrup and toss in already cold carrots. Stir-fry until browned (about 5 minutes). Season with salt, pepper thyme /or dill.
Serve cutlets with the nut crumbs and the horse radish applemousse.

Xmas 2012 Belgium 041Kohlrabi with herbs and salmons

Ingredients: 1 bunch of leek, 1 bunch of dill, 1 bunch of watercress, 850 gr kohlrabi, 4 salmon filets, salt, 75 ml fishfond, 2-3 tbs of horseradish, (fresh), 2 tbs of mustard, (with seeds) 40 gr butter rose pepper

 Directions:Chop finely the leek, the fresh dill and watercress. Peel kohlrabi and cut the slices into very thin strips (julienne) and season with salt to soften the kohlrabi.
 Add mustard seeds to butter, add to kohlrabi and cook in 5 tablespoons of water for 10 minutes.

For the salmon
Preheat the oven to 180’C.  Prepare broth from the fish stock. Rub salmon with horseradish butter and place into a casserole. Pour stock over salmon and cook on 180 grades for 12 minutes.
(The salmon needs to be pink in the middle). Remove from the oven and allow to rest for a few minutes. Squeeze on the lemon juice.
At serving: place salmon into a kohlrabi leaf, arrange thecooked kohlrabi on the top of it and bestrew with the herbs and decorate with some pink-rose pepper.
 
Spinach with figs and ginger flavoured chicken

Ingredients: 50 gr ginger, 50 gr butter, 4 chicken filets, 250 gr red onion, 225 ml prune wine, salt, 1,2 kg spinach, 75 gr stewed figs, 2 tbs honey, pepper, 2 tbs spice mixture, 15 g sesam, 1 tbs bio lime wedges

Directions: Peel ginger, and grate. Add it to 25 grams of butter flavor with honey. Mix ingredients well.

Chop onion. Salt it and place into a bowl. Pour over prune wine and let onion soak.

Wash and clean young, fresh spinach. Cook for 2 minutes in salty water. Meanwhile chop figs. In a medium skillet over medium-high heat, add the oil and when it is hot, add the figs. Pour over chicken stock and cook until stock is nearly completely reduced, about 2 minutes. Add the spinach and cook, stirring, until wilted, about 2 minutes. Season with the salt and pepper (if necessary).

Salt and pepper chicken then rub in the gingery butter and honey mixture. Put chicken into preheated oven and cook on 220 grades for 20 minutes. Melt remained butter then flavoured with the five spices add spinach and figs and sauté for 6 minutes. Toss sesam seeds and lime zest. Serve chicken with spinach and onion.

Cabbage with Emmental cheese on brown bread bed (I couldn’t resist to display this picture. It was taken in a wild animal park and the goat ate a cabbage so the whole situation expressed very well a Hungarian saying: Set the goat to keep the cabbage! It corresponds to the English: set the fox to keep the geese)

Ingredients: 550 g cabbage, salt, pepper, 150 gr chalotte, ½ tbs of carraway seeds, 1 tbs butter, 150 g sour cream, nutmeg, 50 g emmentaler, 4 big slices of brown bread, 4 slices of bacon, 4 tbs chives, radish

Directions: Cut and rasp cabbage then in a large pan of boiling, salted water, blanch it and cook for 5 minutes. Sieve and put in a deep salad bowl. Chop the onion, add carraway seeds to butter and mix it well. Flavor sour cream with salt and pepper and nutmeg, stir in some grated cheese. Add cabbage to sour cream mixture. Fold it lightly with the salad-servers.

Toast the breads, place sour cream and cabbage mixture on top of each toasts, place bacons and grill them until bacon slices will be crispy. Serve toast with fresh radish and chopped chives.

Rendezvous with Mr Bean

220px-Annibale_Carracci_The_BeaneaterOlives, artichokes, ginger and lemongrass can make very good friends to bean. Here I have three dishes with different kind of beans and were prepared on three different ways: 

Beef curry with beans (Thai)

Ingredients: 1 kg beef sirloin, 2 ek sunflower oil, salt, pepper to taste, 60 gs ginger root, 4 chalotts, 3 cloves of garlic, 2 stalks of lemon grass, 2-4 green chilli, 1-2 tbs green curry pasta, 500 gr green beans, 6 kaffir lime leaves, 500 ml coconut milk, 300 ml beef fond, 2 tbs fish sauce (alternative), a pinch of sugar, 1 tbs lemon juice, fresh coriander

Directions: Heat the oil in a 10-inch straight-sided sauté pan over medium-high heat. Season the sirloin tips with salt and pepper and sear the meat in batches until nicely browned on two sides, 1 to 2 minutes per side. Transfer to a plate.

Reduce the heat to medium. Add the shallots and garlics to the pan and cook until just tender and lightly browned, 2 to 4 min. Add the ginger, lemongrass and cook, stirring, until fragrant, about 1 min. Add the curry paste and cook, stirring, about 30 seconds. Stir in 1/4 cup of the broth, scraping up any bits that are stuck to the pan. Add 1/3 cup of the coconut milk, stirring until the curry paste has blended in completely. Stir in the remaining coconut milk and broth. Add the fish sauce.

Increase the heat to medium high. Return the beef to the pan (along with any juices), stir, and simmer until the meat is just cooked through, 8 to 12 minutes.

Or preheat oven for 180 grades place meat alongside with the bean and the other vegetables into oven and let it simmer for 2 hours.

If you happen to choose the way of cooking then take the pan off the heat. Remove the meat and transfer to a cutting board. Add green bean into the sauce and cover the pan and simmer for 10 more minutes. Let the meat rest for 1 minute then slice it thinly across the grain; return it to the pan along with the lime zest. If necessary, return the pan to medium heat until the peas are thawed and heated through.

Portion the curry serloin into four warm bowls, sprinkle with the cilantro, and serve with the lime wedges and with the turmeric flavoured jasmin or basmati rice.

Green beans with sun dried tomatoes and meatballs (Italian)

Ingredients: 600 g beans, salt, 2 onions, 4 cloves of garlic, 9 tbs olive oil, 4 sun dried tomatoes in oil, 4 black olives, without pit, 150 ml beef fond, 1 dry bread, 1 sprig of rosemary, 3 sprig of thyme, 500 ml minced meat, 1 egg, black pepper, 70 g feta cheese, 1 summer savory

Directions: Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp for roughly 2-5 minutes. Drain and shock in a bowl of ice water to stop from cooking.

Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and sauté until fragrant, about 30 seconds. Add the beans and continue to sauté until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

Peel onion, garlics, chop then sauté them in 2 spoons of olive oil. Chop sun dried tomatoes, add black olives to pan and cook everything together.

Soak bread in 150 ml hot water. Peel onion and 2 garlic cloves, and chop them finelly. Chop rosemary and thyme. Prod the water from bread and mix all ingredients (egg, spices etc.) in a large bowl, use your bare hands for best results. Break Feta cheese with a fork, add to meat and bread massa. Roll meatballs to about the size of a golf ball.

 Heat oil in a pan, fry the meatballs.

Cut nicely the summer savory herb add to the bean and tomato& olives mixture, pour over beef fond. Cover pot with the lid and let it cook for 5 minutes.

Serve beans with the meatballs and chips.

Thick bean salad with artichoke (on my way)

Ingredients: juice of a half of a lemon, 4 artichokes, 300 gr thick beans, 12 cherry tomatoes, black pepper, 60 ml olive oil, 12 fresh mint leaves, 4 tbs parmesan cheese grated

Directions:Cook the artichokes in 3-4 liters of salty water with the juice of 1 lemon. 30-40 minutes.

Cook the green beans for two minutes in salty water. Proceed according to the previous recept.

Wash the tomatoes and quarter.

Drain the artichokes, turn them upside down to allow more water to escape from the leaves.

Make honey-mustard mayonnaise dressing for the artichoke.

Arrange large beans and artichoke leaves and heart with the tomatoes on a plate, salt and pepper to taste if necessary. Decorate the salad with mint leaves and grated parmesan.
